This is a great way to use up leftover rice-y dishes. Cut peppers in half, remove seeds and the white bits, then fill the halves with your rice leftovers. One pepper per person should do. Or more if you like.

Then bake in the oven at 200°C for about 20 minutes or until the peppers start to go a little black at the edges. There aren’t many things that smell as tempting as peppers cooked in the oven…
Serve with.. well, whatever you like! Maybe you have some other leftovers you could have too. I had a lonely vegetable samosa in the freezer, so I stuck that in the oven too. Maybe you wouldn’t traditionally eat samosas with something with an Italian flavour, but I’m a bit of a food rebel like that. ;-)
I reckon if something tastes nice, it won’t taste any less nice if I eat it with something it doesn’t ‘normally’ go with. I’d happily eat a Yorkshire pudding with my chilli if that’s what I fancy. Of course Tony thinks that’s pretty much heresy! ;-)
